Description
- As F&B Cost Controller you will establish in conjunction with Food and Beverage Manager and Executive Chef standard portion sizes and monitor conformance, determine and review periodically potential cost for all food and beverage outlets, review and provide current portion cost information in order to appraise menu, conduct monthly inventories and prepare sales history through menu abstracts.
Responsibilities
- Spot check merchandise received to ensure that it conforms to established specifications for weight, count, trim and are correctly invoiced.
- Reconcile total food purchases as invoiced by suppliers with that shown on receiving clerk's daily reports.
- Determine that goods are stored and secured properly; that they are price stamped and issued in proper rotation and that the key control to the storage areas is followed.
- Calculate the cost of employees' meals on a monthly basis in accordance with procedures.
- Prepare and distribute monthly report as directed.
Qualifications and Skills
- A degree in Accounting or its equivalent
- At least 3 years "hands on"experience as a F&B Cost Controller in a 5 star class international hotel or hospitality industry.
- Good understanding of the Nigeria/African business and market environment
- Ability to demonstrate a proven track record of results achieved, creativity and the implementation of new practices.
- Excellent interpersonal and communications skills (written & oral proficiency in English)
- Service minded and ability to involve and support operations
- Business savvy and good people skills.
