Job Summary

  • The Chef In-Charge's area of responsibility include Kitchen and Lounge. Will assist in leading and managing all culinary activities, daily kitchen and lounge operations, ensuring compliance with set standards in quality, hygiene, productivity and customer satisfaction.
  • Manage menu planning, assists sales personnels and assistant other chefs during peak periods.
  • Lead product improvement for smooth facility operation and maximize the financial performance in area of responsibility. Determine training and implement plans to accomplish goals.

Your Tasks / Your Responsibilities

  • Supervise and manage Day-to-Day Kitchen Operations.
  • Attain regular training and ensure proper reporting guideline are observed and followed.
  • Prepare high-quality meals in a timely manner and focus on consistent and courteous service.
  • Set up and maintain the kitchen to standard and understand employee positions well enough to perform duties in employee absence.
  • Encourage and build mutual trust, respect and cooperation among team members.
  • Ensure compliance with all HACCP standards and procedures.
  • Provide regular training, delegate and maintain the productivity level of employees.
  • Inform window sales personnels and kitchen crew about daily specials.
  • Ensure compliance with all food handling and sanitation standards.
  • Ensure appealing plate presentation and establishes guidelines so employee understand expectations and parameters.
  • Handles customer problems and compliants and ensure effective service recovery.
  • Establishs trust and maintain open collaborative relationships with employees and ensure employee do the same within the team.
  • Supervise assistant chef and assist as needed.
  • Solicit employee feedback, utilizes an “open door” policy and reviews employee satisfaction results to identify and address employee problems or concerns.
  • Monitor freshness of food stock and supplies and place new requisitions as required.
  • Manage the flow of ready to eat food and ensure strick adherance to FIFO.
  • Ensure compliance with all health and safety regulations within the kitchen area.
  • Plan and manage Forecast and budget, Menu engineering, Costing and Promotions.
  • Meet with customers, suppliers and ensure quality standards are followed and maintain.
  • Maintain the food truck, protect company Assets, represent the brand and company culture.

Candidate Profile
Education and Experience:

  • High School Diploma or GED; 4 years experience in the culinary or related professional area

OR

  • 2 years Degree from an accredited university in Culinary or Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 2 year experience in the culinary or related professional area.

  • An understanding of trends and ability to modify recipes to meet customers wishes and requests.
