We are recruiting to fill the position below:

Job Title: Food and Beverages Supervisor

Location: Lagos

Responsibilities

  • Ensure that all tables are fully set up, all stock is adequate, and the area clean to service standards.
  • Continuously verify that guests receive the service outlined in the quality standards.
  • Deal promptly with any guest complaints that might arise and communicate with guests, using the first names of regular guests.
  • Proficient in product knowledge, of food and beverages, including wine list, and able to suggest menu, as well as, up-sell products to result in higher average revenue.
  • Ensure that the rooms are at the right temperature, taking into consideration guest’s comfort and that stationery, guest supplies and other service supplies are adequate.
  • Ensure that orders are taken and placed efficiently, and follow up to ensure that orders are delivered within specified time.
  • Ensure that there is smooth service delivery of beverages i.e. refilling of wines and offering of further drinks.
  • Check that all restaurant and sideboards are kept clean and ensure that restaurant billing procedures are followed throughout service.
  • Ensure that cleaning procedures are followed as per checklist and review POS pricing /maintenance issues to ensure that proper check handling procedures are followed
  • Ensure correct handling procedures to minimize China and glassware breakage and waste.
  • Responsible for proper accounting and reconciliation of the Point of Sale Systems and revenues.
  • Perform opening and closing procedures as required along with daily functions.
  • Study the restaurant hand over book and action accordingly; check on table and VIP bookings to ensure that reserved tables are allocated accordingly; and be present at all times in the service area.
  • Communicate and assist guests during service and clear dirty plates, cutlery and glasses as service progresses, maintaining general cleanliness of the service area and continuously prepare table for next service period.
  • Ensure that all bills are opened per order specification, and that they are fully completed, closed off and billed correctly to the respective accounts.
  • Ensure that all payments are collected and verified by cashier, and accurate change is handed over to the guests promptly.
  • Serve food and alcoholic beverages to guests at the bar; prepare alcoholic beverages for servers at the service bar window; and ensure that all bars are clean and well maintained at all times
  • Ensure that all bar equipment is functioning, well maintained, and where necessary, all faults are reported.
  • Proficient in product knowledge, including wines, cocktails, spirits, beers, hard liquor, etc and aware of any out of stock items; and able to suggest alternative menus and up-sell products.
  • Ensure that the bar is sufficiently stocked for service and that all beverages are served in the correct glassware and temperature.
  • Ensure that beverages are garnished per required standard and deliver excellent customer service, in a friendly and courteous manner.
  • Deal promptly with any guest requests or complaints that might arise, and continuously verify that guests are receiving service as outlined in the bar standards.
  • Ensure that bar stock are correctly taken, as per unit requirements, and monitor and check for any expired products.
  • Control beverage stock and ensure inventory level is maintained at par level, and ensure that bar opening and closing procedures are followed, and participate in all stock physical count activities.
  • Prepare drink orders for guests according to specified recipes using measuring systems.
  • Stock ice, glassware, and paper supplies and wash soiled glassware, remove soiled wares from bar top and tables and place in designated area.
  • Ensure that the bar area is kept stocked, clean and tidy at all times, and anticipate and communicate replenishment needs.
  • Respond to questions and suggestively make sales by providing food and beverage recommendations.
  • Deliver food and drinks to guests in an efficient and professional manner, maintaining the standards required.
  • Continually clear any unwanted dishes, glasses, and/or debris from bar top and change ashtrays after one butt.
  • Discontinue alcoholic service and/or report any potentially intoxicated guests to the General Manager.
  • Ensure the cleanliness and hygiene of the restaurant and bar areas are in compliance with required standards and regulations.
  • Transport food and beverages, as well as, supplies and equipment to other departments as needed.
  • Perform daily cleaning routine checklist of opening and closing operations of Restaurant & Bar and follow safety procedures at the Restaurant & Bar areas.
  • Identify and report any deficiencies at the Restaurant & Bar area to the F&B Manager, who should follow up to rectify deficiencies.
  • Required to work on a rotating shift pattern including weekends, late nights and special events.
  • Perform any other job-related duties as assigned.

Requirements

  • Minimum academic qualification of HND / BSc graduate Degree or it's equivalent from a reputable higher institution would be an added advantage.
  • Substantial Customer Service background within the hotel industry
  • At least 5 years Food and Beverage/Restaurant Supervisor experience.
  • Daily hotel operational knowledge, with a minimum of three year’s experience.
  • Proficient in the use of Opera and other Front Office software.
  • Advanced use of Microsoft Word and Excel.
  • Excellent written and verbal communication skills.
  • Demonstrate accuracy and thoroughness, and exhibit sound judgment.
  • Ability to develop and maintain gracious and efficient front desk procedures.
  • Ability to deliver superior and consistent guest experience through employee development, service standards and training.
  • Understand business implication of decisions and demonstrate good Knowledge of the market and competition.
  • Manage competing demands and able to deal with frequent change, delays, or unexpected events
  • Attention to detail and a commitment to high standards of delivery
  • Excellent organizational skills and ability to improve and promote quality.
  • Self-motivated and exhibit calmness under pressure, with a flexible approach.
  • Strong commitment to team work and supporting the wider objectives of the Company.

Salary Range
N150,000 - N200,000 / month.
