Job Summary

  • The Research & Development Chef will be responsible for creating, testing, and standardizing innovative continental cuisine and contemporary pastry recipes.
  • The role ensures consistency in food quality, taste, and presentation across all production points while also supporting kitchen training and menu development.
  • The ideal candidate is creative, detail-oriented, and able to translate culinary innovation into scalable, repeatable standards for execution.

Key Responsibilities

  • Lead the research and development of new continental cuisine and contemporary pastry recipes aligned with the brand’s concept and customer expectations.
  • Create, document, and standardize recipes to ensure consistency in taste, portioning, presentation, and preparation methods across all outlets.
  • Conduct continuous testing, refinement, and improvement of existing menu items to enhance quality and customer satisfaction.
  • Collaborate with the Head Chef and culinary team in designing seasonal menus, specials, and new product offerings.
  • Train kitchen staff on recipe execution, portion control, plating standards, and preparation techniques to ensure uniformity across teams.
  • Monitor food trends and industry innovations to introduce relevant and competitive menu ideas.
  • Ensure compliance with food safety, hygiene, and kitchen operational standards during all R&D processes.
  • Support cost control efforts by developing recipes that balance quality with profitability.
  • Maintain proper documentation of all recipes, processes, and updates for operational use.

Key Requirements

  • Proven experience as a Chef with exposure to continental cuisine and pastry production.
  • Strong background in recipe development, menu innovation, and kitchen operations.
  • Ability to train and transfer knowledge effectively to kitchen staff.
  • Strong attention to detail, especially in consistency and presentation standards.
  • Good understanding of food costing, portion control, and kitchen efficiency.
  • Creativity and passion for culinary innovation.
  • Ability to work collaboratively in a fast-paced hospitality environment.
