Job Summary

  • We are seeking a passionate, disciplined, and experienced Sous Chef / Senior Commis Chef to support the kitchen operations and culinary team in delivering exceptional dining experiences to guests.
  • The successful candidate will work closely with the Head Chef and kitchen team to ensure smooth daily operations, maintain food quality standards, and contribute to menu execution and kitchen efficiency.

Key Responsibilities
Kitchen Operations:

  • Assist the Head Chef in the daily running of kitchen operations.
  • Prepare and execute meals according to approved recipes and presentation standards.
  • Carry out mise en place efficiently before service periods.
  • Support in supervising junior kitchen staff and ensuring smooth workflow.
  • Ensure consistency in food quality, portioning, and plating.
  • Assist in monitoring food preparation and cooking processes during service.
  • Maintain cleanliness and organization of all kitchen sections.
  • Ensure proper food storage, labeling, and stock rotation using FIFO standards.
  • Assist with inventory control and stock management.
  • Report shortages, spoilage, or kitchen equipment issues promptly.
  • Ensure all kitchen equipment is handled properly and safely.

Culinary Duties:

  • Demonstrate strong knife handling and cutting skills.
  • Apply proper cooking techniques including grilling, frying, roasting, sautéing, steaming, baking, and sauce preparation.
  • Prepare proteins, vegetables, sauces, soups, salads, breakfast items, and other menu components as required.
  • Support menu development and seasonal food preparation when required.
  • Maintain high standards of taste, presentation, and consistency.

Hygiene & Safety:

  • Understand and strictly follow food hygiene and kitchen sanitation standards.
  • Ensure compliance with HACCP and food safety regulations.
  • Maintain personal cleanliness and professional kitchen appearance at all times.
  • Ensure workstations are sanitized before, during, and after service.
  • Follow health and safety procedures to prevent accidents and contamination.

Teamwork & Communication:

  • Work collaboratively with kitchen and service teams.
  • Take instructions positively and demonstrate willingness to learn.
  • Communicate clearly and professionally in English.
  • Maintain a respectful, disciplined, and professional attitude at all times.
  • Assist in training and supporting junior kitchen staff when necessary.

Requirements & Qualifications
Mandatory Requirements:

  • Passion for cooking and hospitality.
  • Previous experience working in a professional kitchen, hotel, resort, restaurant, or hospitality environment.
  • Strong understanding of mise en place and kitchen preparation processes.
  • Good knowledge of kitchen hygiene and food safety practices.
  • Knowledge of knife skills and proper kitchen equipment handling.
  • Understanding of various cooking techniques and food preparation methods.
  • Ability to read, write, communicate, and comprehend English effectively.
  • Must be teachable, adaptable, and willing to grow professionally.
  • Ability to work under pressure in a fast-paced environment.
  • Good physical stamina and ability to stand for extended periods.
  • Ability to work flexible shifts, weekends, and public holidays.
  • The ideal candidate must have strong culinary foundations, a positive attitude, willingness to learn, and the ability to thrive in a fast-paced hospitality environment. This role requires professionalism, teamwork, consistency, and attention to detail in food preparation, hygiene, and kitchen organization.

Preferred Qualifications:

  • Culinary school certification or hospitality training is an added advantage.
  • Experience in continental, local, or resort-style cuisine is beneficial.
  • Previous experience in a live-in hospitality role is an advantage.
