Job Summary
We are excited to partner with a well-renowned private international school to recruit an F & B or Catering Manager position, to lead and manage our exciting catering at a boarding school in Kaduna
The F & B or Catering Manager will have full responsibility for the catering department and will lead the team in delivering freshly produced meals for the pupils and school staff which operates 7 days a week during term time.
We are looking to appoint an enthusiastic and self-motivated Catering Manager to manage our catering team and someone who is passionate about cooking and enjoys using their own initiative.
Your role will involve planning, preparing and presenting all food, in line with the statutory regulations and school standards and will also ensure that the school catering is managed effectively with relation to staffing, budget, stock, service and delivery.
In this role, the key focus will be delivering the highest quality of food and service for our pupils & students and ensuring that the catering offer is exciting and innovative through the development of your team and continuous review and improvement.
Key Responsibilities
To prepare and cook nutritionally balanced food.
To control portions and food cost management.
Organise and supervise the food service.
Allocate duties and responsibilities to kitchen staff and provide general supervision including staff inductions and food hygiene training.
Ordering stock/ stock control.
Ensure all supplies of food, equipment and cleaning materials are of the right standard.
To produce work rotas and allocate tasks accordingly.
Monitor the performance of catering staff and report any issues to the Operations manager.
Ensure the health, hygiene, and security of all personnel on the premises are according to statutory regulations.
Assist in the control of costs by following the recommended menus and recipes provided by the Exec Chef Team.
Maintain necessary records e.g., stock taking, finance sheets, payroll and ensure they are submitted in time.
To liaise, as required, with catering staff, suppliers, head teachers, principles and others concerned with the running of the services.
Deal with complaints in a timely, efficient manner.
To achieve sales, labour and consumption budgets.
To complete adhoc tasks as required
Lead, develop, coach, train, and inspire your team
Build and maintain a professional and friendly relationship with school staff and pupils to deliver a true partnership with the school
Ensure consistency of food and service standards
Deliver added value events such as theme days and tasting tables to make the food offer exciting and encourage meal uptake
Manage the school’s catering budget while ensuring the best quality of service and food offer
Liaise with the school and pupils to ensure we are delivering on and, where possible, exceeding expectations
Oversee the kitchen and menu development
Deliver exceptional food and customer service
Maintain company systems & procedures, and legislation
Job Requirements
The ideal candidate will have:
Has 4 years catering manager experience
Has a Cunilary qualification - Highly desirable
Has a proven track record of working in a busy kitchen environment
Ideally holds aFood Safety Certificate
Has knowledge of personnel management, budgeting, hygiene and health and safety
Ability to remain calm under pressure.
Is able to communicate, enthuse and inspire
Is able to work with the community
Has a desire to play an active role in the development of the school and to use their own skills, talents and interests for the benefit of children
Excellent craft skills with a genuine love of food
Understanding of nutrition and healthy eating
A flair for food presentation and an understanding of current food trends
A real people person who will immerse themselves in the culture of both the school and Palmer & Howells and drive our values within the catering team
Knowledge of health and safety management
Financial understanding of cost controls and waste management
Previous experience managing a team in a similar setting.
