Job Summary
We are seeking a skilled and passionate Bakery Baker to join our production team. The successful candidate will prepare, bake, and finish bread, pastries, and other baked items according to company recipes and standards.
This role requires attention to detail, discipline, creativity, and the ability to work efficiently under pressure. You will be responsible for ensuring that every product meets the company’s quality expectations while maintaining hygiene and production efficiency.
Key Responsibilities
Production & Baking:
Prepare, mix, knead, and proof dough for bread and pastries according to standard recipes.
Operate and monitor bakery machinery such as mixers, ovens, slicers, and dough dividers (Macadams and other bakery equipment).
Monitor baking times, oven temperatures, and batch consistency to maintain quality output.
Bake and finish products with attention to appearance, texture, and flavor.
Follow daily production schedules and quantity targets.
Quality & Hygiene:
Maintain high hygiene standards and comply with food safety regulations (NAFDAC, SON, and company SOPs).
Conduct daily cleaning of work surfaces, ovens, and tools.
Ensure all baked items meet internal quality assurance standards before dispatch.
Report any product deviation or equipment malfunction to the Production Supervisor immediately.
Inventory & Coordination:
Monitor raw material usage (flour, yeast, sugar, etc.) and report shortages to the Store or Production Head.
Assist in receiving, sorting, and storing ingredients properly.
Work collaboratively with assistant bakers, packaging, and quality control staff for smooth production flow.
Innovation & Improvement:
Contribute ideas for new recipes and seasonal product varieties.
Support continuous improvement of baking methods and efficiency.
Participate in in-house training and quality control sessions organized by the HR or Production Department.
Requirements & Qualifications
Minimum of SSCE / OND qualification (baking certification or vocational training is an added advantage).
Proven experience as a Baker or Production Staff in a bakery or food manufacturing company.
Sound knowledge of baking techniques, recipe measurement, and temperature control.
Familiarity with industrial bakery equipment (mixers, ovens, dividers, provers, etc.).
Strong sense of discipline, cleanliness, and teamwork.
Physical stamina and ability to stand for long hours in a warm production area.
Good time management and multitasking skills.
Willingness to work early mornings, night shifts, weekends, or holidays.
Work Environment:
Fast-paced industrial bakery setting with scheduled production targets.
Collaboration with teams in production, packaging, quality assurance, and dispatch units.
Work hours may include rotational shifts.
