The Commis Chef is responsible for assisting in the preparation, cooking, and presentation of dishes under the supervision of senior chefs. The role supports all kitchen operations by ensuring ingredients are prepared, workstations are clean, and food quality standards are maintained.

The Commis Chef plays a vital role in maintaining consistency, efficiency, and high standards within the kitchen.
Role Responsibilities
Food Preparation and Cooking:
Assist in the preparation, cooking, and presentation of dishes as directed by the Chef de Partie or Sous Chef.
Follow recipes, portion control, and presentation guidelines to ensure consistency.
Prepare ingredients, including washing, chopping, measuring, and portioning.
Support in plating and garnishing dishes during service.
Ensure all food is prepared in a timely manner according to kitchen standards.
Kitchen Organization and Cleanliness:
Maintain a clean, hygienic, and organized workstation at all times.
Follow all hygiene and sanitation policies, including cleaning tools, surfaces, and equipment.
Assist in cleaning the kitchen, including work areas, utensils, and storage spaces.
Dispose of waste and food scraps appropriately and in line with company procedures.
Stock and Inventory Support:
Assist in receiving, unpacking, and storing food supplies and ingredients properly.
Ensure all ingredients are correctly labeled, dated, and stored under proper conditions.
Report shortages or damaged goods to the Chef de Partie or Sous Chef.
Support inventory counts and maintain proper rotation of stock (FIFO).
Food Quality and Safety:
Ensure all meals meet company standards for taste, presentation, and portioning.
Adhere strictly to food safety, hygiene, and handling procedures.
Use protective clothing and equipment as required by kitchen safety guidelines.
Report any potential hazards, safety issues, or equipment faults to supervisors.
Team Support and Learning:
Support senior chefs in all kitchen operations and take direction effectively.
Participate in training sessions and apply feedback to improve culinary skills.
Contribute to team efforts by maintaining a positive attitude and willingness to help.
Assist in daily mise en place preparation for upcoming shifts or service periods.
Customer Service and Professionalism:
Maintain a professional demeanor and positive attitude when interacting with colleagues and service staff.
Contribute to the timely delivery of quality dishes to ensure customer satisfaction.
Support in special functions, events, or catering as assigned by the Executive Chef.
Experience / Qualification
Minimum of SSCE, OND, or Diploma in Culinary Arts, Hospitality, or related field.
Basic culinary training or apprenticeship in a professional kitchen is preferred.
2–4 years of experience as a Commis Chef or Kitchen Assistant in a restaurant, bakery, or hotel.
Familiarity with kitchen tools, equipment, and basic cooking techniques.
Certification in food safety or hygiene will be an added advantage.

Ability to follow recipes, instructions, and portion control guidelines.
Good understanding of hygiene and safety regulations.
