The National Commis Chef supports kitchen operations by preparing ingredients, assisting in cooking Nigerian and continental dishes, maintaining high standards of hygiene, and ensuring smooth workflow in the kitchen.
The role plays a key part in delivering quality meals and supporting senior chefs in daily food production.
The ideal candidate must be passionate about cooking, attentive, and eager to learn, with strong knowledge of Nigerian cuisine and the ability to work effectively in a fast-paced kitchen environment.
Responsibilities
Food Preparation:
Assist in preparing ingredients for meals, including washing, cutting, marinating, seasoning, and portioning.
Prepare basic Nigerian dishes such as jollof rice, fried rice, soups, stews, and grills under supervision.
Follow recipes and presentation standards set by the senior chefs.
Assist in preparing mise en place for daily kitchen operations.
Cooking Assistance:
Support the Chef de Partie and Sous Chef in cooking various meals.
Operate grills, ovens, fryers, and other kitchen equipment safely.
Ensure proper cooking techniques and timing to maintain food quality.
Assist in plating and garnishing dishes as directed.
Kitchen Hygiene and Safety:
Follow strict hygiene and food safety standards (HACCP).
Keep workstations clean, organized, and sanitized at all times.
Properly store food items to prevent contamination, spoilage, or wastage.
Dispose of waste following kitchen sanitary procedures.
Report any equipment faults or safety hazards immediately
Inventory and Stock Control:
Assist in receiving food supplies and verifying quantity and quality.
Rotate stock using FIFO to minimize waste.
Report low-stock items to the Chef de Partie.
Handle kitchen tools and equipment responsibly.
Team Support and Cooperation:
Work closely with other kitchen staff to ensure smooth operations.
Support senior chefs during peak meal periods.
Participate in menu preparation and contribute new dish ideas when required.
Attend kitchen briefings and training sessions for continuous skill development.
Experience / Qualification
Minimum of SSCE; culinary training or certificate is an added advantage
1 - 3 years of experience as a Commis Chef or kitchen assistant
Experience working in hotels, restaurants, lounges, or hospitality environments is preferred
Practical knowledge of Nigerian cuisine is highly desirable
Familiarity with basic kitchen tools, equipment, and hygiene procedures
Competencies / Skills:
Good knowledge of Nigerian dishes, spices, and cooking techniques
Basic culinary skills and willingness to learn advanced methods
Strong attention to detail and presentation
Good teamwork and communication skills
Ability to follow instructions and work under pressure
Basic understanding of food safety and hygiene
Ability to multitask effectively in a busy kitchen environment
