Job Title: Grill's Commis Chef

Location: Maitama, Abuja (FCT) 
Employment Type: Full-time

Main Functions

• The Grill's Commis Chef assists the Grill Chef in preparing, marinating, grilling, and presenting grilled dishes while maintaining high standards of quality, hygiene, and kitchen discipline.
• The role ensures smooth workflow within the grill section, supports senior chefs, and contributes to consistently delivering excellent grilled meals to guests.
• The ideal candidate must be passionate about grilling, attentive to detail, energetic, and able to work efficiently in a fast-paced kitchen environment

Role Responsibilities
Preparation of Ingredients and Mise en Place:

• Prepare ingredients such as vegetables, proteins, marinades, and sauces for grill service.
• Portion, season, and marinate meats, poultry, and fish according to recipes.
• Ensure all items required for the grill section are stocked and ready before service.
• Maintain proper storage and labelling of all prepared items.

Grilling and Cooking Support:

• Assist in grilling steaks, chicken, suya, kebabs, seafood, burgers, and barbecue items.
• Monitor grill temperatures and cook times to ensure consistency and quality.
• Follow grilling techniques as instructed by the Grill Chef.
• Assist in plating grilled dishes with proper presentation and garnishing.
• Operate grills, fryers, ovens, and smokers safely and efficiently.

Quality and Food Safety Compliance:

• Ensure all grilled foods meet required taste, texture, and presentation standards.
• Follow proper food handling procedures and HACCP guidelines.
• Maintain the cleanliness of the grill station before, during, and after service.
• Store raw materials correctly to avoid contamination.
• Report any equipment malfunction or safety hazard.

Inventory and Stock Management:

• Assist with receiving, checking, and storing raw materials used in the grill section.
• Monitor stock levels and inform the Chef de Partie of shortages.
• Follow FIFO procedures to minimize food wastage.
• Ensure portion control to maintain cost and quality standards.

Teamwork and Operational Support:

• Work closely with the Grill Chef and other kitchen staff to ensure timely food delivery.
• Support colleagues during peak hours to maintain smooth kitchen operations.
• Attend kitchen briefings, trainings, and contribute ideas to menu development.
• Assist in deep cleaning activities assigned by the Chef.

Experience / Qualifications

• Minimum of SSCE; culinary certification is an added advantage
• 2 - 4 years of experience in grilling or kitchen operations
• Prior experience in restaurants, hotels, lounges, or grill houses is preferred
• Familiarity with the operation of gas and charcoal grills, smokers, and ovens.

Competencies/Skills:

• Basic grilling and cooking skills
• Good understanding of heat control and grill equipment
• Strong attention to detail and food presentation
• Ability to work well in a hot and fast-paced kitchen
• Knowledge of Nigerian and continental grilled dishes
• Good teamwork and communication abilities
• Basic food safety and hygiene knowledge
• Ability to multitask and follow instructions.
