Job Title: Grill Commis
Location: Abuja (FCT)
Main Function
The Grill Commis Chef supports the grill section by preparing ingredients, handling grilling operations, and maintaining high standards of food quality, hygiene, and presentation.
The role assists the Grill Chef and Chef de Partie in producing grilled meats, poultry, fish, and vegetables according to hotel standards.
The ideal candidate must have passion for grilling, strong attention to detail, and the ability to work effectively in a high-heat, fast-paced kitchen environment.
Responsibilities
Food Preparation:
Prepare and portion meats, poultry, fish, and vegetables for grilling.
Wash, trim, marinate, and season items according to established recipes.
Prepare daily mise en place for the grill station.
Ensure ingredients are properly stored and labeled.
Grilling Operations:
Assist in operating grills, charbroilers, and other high-heat equipment safely.
Monitor cooking temperatures and times to ensure food is cooked correctly.
Grill items such as steaks, chicken, suya-style meats, kebabs, fish, burgers, and vegetables under supervision.
Follow presentation and portion standards for each dish.
Quality Control:
Ensure meats and seafood are fresh and handled under proper temperature control.
Taste and adjust seasoning when authorized by senior chefs.
Maintain consistency in doneness—from rare to well-done—according to guest or menu requirements.
Kitchen Hygiene & Safety:
Follow HACCP and food safety guidelines strictly.
Keep the grill area, work surfaces, tools, and equipment clean at all times.
Safely handle hot equipment, open flames, and sharp tools.
Dispose of waste properly and maintain a clean working environment.
Inventory & Stock Management:
Assist in receiving and storing grill supplies.
Rotate stock using FIFO to reduce waste and spoilage.
Report low-stock items or damaged products to the Chef de Partie.
Handle kitchen tools and grilling equipment responsibly.
Team Support:
Work closely with the Grill Chef, Chef de Partie, and other kitchen staff.
Assist during peak service periods by preparing and grilling orders quickly and accurately.
Participate in menu development when required.
Attend kitchen briefings and training for continuous improvement.
Requirements
Experience / Qualification:
Minimum of SSCE; culinary training or certificate is an advantage.
1 – 3 years experience as a Grill Commis, Kitchen Assistant, or similar role.
Experience working in hotels, restaurants, or grill-focused kitchens is preferred.
Knowledge of meat cuts, marination techniques, and grilling methods.
Familiarity with temperature control and heat management.
Competencies / Skills:
Good grilling skills and understanding of doneness levels.
Strong attention to seasoning, flavor, and presentation.
Ability to follow recipes accurately.
Good communication and teamwork skills.
Ability to multitask and work under heat and pressure.
Basic knowledge of food safety and hygiene procedures.
