Job Title: National Commis Chef
Location: Abuja
Main Function
The National Commis Chef supports the national kitchen in preparing Nigerian dishes, ensuring proper food preparation, maintaining hygiene standards, and assisting senior chefs in daily cooking operations.
The role contributes to delivering high-quality meals and smooth service in a fast-paced hospitality environment.
The ideal candidate should be passionate about Nigerian cuisine, attentive to detail, and eager to learn and grow within the culinary team.
Responsibilities
Food Preparation:
Wash, peel, cut, season, and portion ingredients used in Nigerian meals.
Assist in preparing basic Nigerian dishes such as jollof rice, fried rice, soups, stews, and grills under supervision.
Follow established recipes and portion control standards.
Prepare mise en place for all national kitchen operations.
Cooking Assistance:
Support Chef de Partie and Sous Chef during cooking and production.
Safely operate kitchen equipment such as burners, ovens, and grills.
Assist in plating and garnishing local dishes according to hotel standards.
Kitchen Hygiene & Safety:
Maintain strict compliance with food safety and hygiene standards (HACCP).
Keep work areas, utensils, and equipment clean, sanitized, and organized.
Ensure proper storage of raw and cooked items to prevent spoilage or contamination.
Dispose of waste correctly and maintain a clean working environment at all times.
Inventory & Stock Management:
Assist in receiving, sorting, and storing food supplies.
Follow the FIFO method when arranging ingredients.
Report low-stock items, expired items, or poor-quality supplies to the Chef de Partie.
Handle kitchen tools, equipment, and ingredients responsibly.
Team Support:
Work collaboratively with kitchen staff to ensure smooth operations.
Provide support to senior chefs during busy service periods and events.
Participate in menu research and contribute ideas for Nigerian dishes when required.
Attend training sessions and kitchen briefings for continuous development.
Experience / Qualification
Minimum of SSCE; additional culinary training or certificate is an advantage.
1 – 3 years experience as a Commis Chef or Kitchen Assistant.
Previous experience in hotels, restaurants, lounges, or similar hospitality settings is preferred.
Strong knowledge of Nigerian cuisine, ingredients, and cooking techniques.
Basic understanding of kitchen equipment and hygiene practices.
Competencies / Skills:
Good knowledge of Nigerian dishes and cooking processes.
Ability to follow recipes and instructions accurately.
Strong attention to detail and food presentation.
Good teamwork and communication skills.
Ability to multitask and work effectively under pressure.
Basic understanding of food safety and kitchen hygiene.
