We are recruiting to fill the position below:
Job Title: Quality Control Auditor
Location: Ikoyi, Lagos

Reports To: Restaurant Manager / Director of Operations
Division: Restaurant, Kitchen & Food Delivery Operations
The Role
We are looking for a meticulous, experienced Quality Control Auditor to own food and operational quality across our restaurant, dine-in service and food delivery kitchen.
This is a hands-on role — you will be on the ground, in the kitchen, monitoring every stage of the food preparation and delivery process to ensure our standards are consistent, our compliance is airtight and our customers always receive exactly what the Sujimoto brand promises.
You will also build and enforce the QC systems, checklists and SOPs that make excellence the default across both operations.
Monitor and enforce food quality standards across all stages — preparation, cooking, plating and packaging — for both dine-in and delivery orders.
Conduct daily kitchen inspections covering ingredient quality, freshness, portion accuracy, presentation standards and temperature compliance.
Ensure strict adherence to recipes, portion sizes and presentation guidelines for every dish leaving the kitchen.
Identify quality deviations in real time and implement immediate corrective action before food reaches the customer.
Maintain a daily quality log documenting findings, deviations and actions taken.
Food Delivery Quality Control:
Oversee the quality control process specific to the food delivery operation — packaging integrity, order accuracy, temperature retention and presentation upon dispatch.
Ensure every delivery order is checked against the order ticket before it is handed to the rider — no incorrect or incomplete orders leave the kitchen.
Monitor packaging standards to ensure food arrives at the customer in the same condition it left the kitchen.
Track delivery quality complaints and feedback from platforms and customers, and use findings to drive continuous improvement.
Collaborate with the delivery platform team (Uber Eats or equivalent) to maintain strong outlet ratings through consistent quality.
Food Safety, Hygiene & NAFDAC Compliance:
Enforce HACCP principles and food safety protocols across all kitchen and food preparation areas at all times.
Conduct regular hygiene audits covering personal hygiene, workstation cleanliness, equipment sanitation, storage conditions and waste management.
Monitor food storage temperatures, labelling, FIFO rotation and expiry compliance for all raw and cooked ingredients.
Ensure full compliance with NAFDAC guidelines and applicable Lagos State food safety regulations.
Maintain accurate food safety records including temperature logs, cleaning schedules and supplier delivery checks.
SOP Development & Compliance:
Develop, document and implement QC SOPs for dine-in kitchen operations, delivery kitchen operations and packaging processes.
Conduct scheduled and unannounced spot checks to ensure SOPs are being followed consistently — not just during formal audits.
Review and update SOPs regularly to reflect menu changes, operational improvements and customer feedback.
Ensure all kitchen staff are trained on QC SOPs and understand the standard expected of every order.
Team Training & Standards Coaching:
Train kitchen and delivery preparation staff on food quality standards, hygiene protocols and QC procedures.
Identify recurring skill gaps or compliance failures within the team and deliver targeted coaching to address them.
Build a kitchen culture where quality is owned by everyone — not just inspected by one person.
Work alongside the kitchen manager to ensure new staff are onboarded to QC standards from day one.
HSE Compliance:
Conduct regular HSE audits within the kitchen — covering fire safety, equipment safety, chemical storage, burns and cut risk management.
Ensure all PPE (gloves, aprons, non-slip footwear) is available, worn correctly and replaced when necessary.
Maintain HSE records and escalate any safety risks or incidents promptly with recommended corrective actions.
Relevant credentials an advantage: NEBOSH, ISPON, ISO 22000, HACCP certification or NAFDAC compliance training.
Reporting & Performance Tracking:
Prepare daily, weekly and monthly QC reports covering kitchen performance, delivery quality scores, hygiene audit results and corrective actions.
Track delivery platform ratings and customer quality complaints as KPIs and report trends to management.
Maintain a live QC tracker covering all findings, action owners and resolution status.
What You Bring
3+ years experience in food quality control, kitchen operations or F&B compliance
Experience training kitchen teams on quality and hygiene standards
Experience in a restaurant and food delivery environment is strongly preferred
Familiarity with food delivery platforms (Glovo or similar) is an advantage
Strong knowledge of HACCP, food safety principles and NAFDAC compliance
Detail-oriented, self-motivated and confident working in a fast-paced kitchen environment
Proven experience building and enforcing food QC SOPs
Strong written reporting and documentation skills.
