Job Summary
- A Kitchen and Bakery Production Manager is responsible for overseeing the daily operations of the kitchen/bakery and ensuring that food production is efficient, consistent, and meets the standards of the restaurant or catering business.
Responsibilities
Oversee Food Production:
- Ensure food is prepared efficiently, on time, and in the correct quantities.
- Maintain consistency in portion sizes and presentation.
Quality Control:
- Monitor food quality and ensure that health, hygiene, and safety standards are strictly followed.
- Conduct regular checks to maintain compliance with food safety regulations.
Inventory Management:
- Manage stock levels, order ingredients, and ensure that supplies are used efficiently to reduce wastage.
- Conduct regular inventory checks and maintain accurate records.
Team Supervision:
- Manage kitchen staff, including chefs, cooks, bakers and kitchen assistants.
- Organize shift schedules, assign tasks, and provide training to maintain high productivity.
Menu Planning and Development:
- Collaborate with the head chef and management to develop new recipes and menu items.
- Adjust production plans based on customer demand and seasonal changes.
Cost Control:
- Monitor food costs to ensure the kitchen operates within its budget.
- Implement strategies to reduce costs without compromising quality.
Maintain Equipment and Facilities:
- Ensure kitchen equipment is properly maintained, serviced, and repaired as needed.
- Keep the kitchen clean and organized at all times.
Health & Safety Compliance:
- Ensure all staff follow health and safety protocols, and the kitchen meets regulatory requirements.
- Conduct safety training and maintain necessary certifications.
Collaboration with Management:
- Report to restaurant management or owners on kitchen performance, staffing needs, and financial metrics.
- Contribute to decision-making regarding operational improvements.
Problem Solving:
- Address any operational issues, including equipment breakdowns, staff shortages, or supply chain delays, to ensure smooth kitchen operations.
